Vegetarian not-sausage rolls

I love sausage rolls, but I know that they are just full of crap and the heartburn they leave behind is not fantastic.

But, I've found a compromise. The following recipe tastes exactly the same as any sausage roll straight from the pie warmer of the corner store. I promise you that you can safely serve them up to any carnivore and they will not even notice the lack of meat.

Vegie Sausage Rolls

3 eggs lightly beaten
1/2 cup (125gms) pecans
1 onion chopped
1tbsp soy sauce
1/2 cup breadcrumbs (maybe need more if the mix seems too wet)
3 sheets puff pastry
1 cup low fat cottage cheese
1 cup rolled oats

Place cottage cheese, pecans. eggs, onion and soy in food processor.
Add breadcrumbs and oats.
Cut pastry sheets in half and spoon mix down middle
Roll over the pastry so it looks like a long sausage roll (I always stick the pastry together with a bit of egg white)
Cut the rolls into whatever length you prefer.
Glaze the tops with the egg white you used to stick them down
Pop in the over and cook at about 200c for about 15-20 mins, or until golden brown

*Next time I make these, I'm going to add in some grated zucchini, carrot and mushroom.

Easy, peasy and delicious!
